Fall is here, with it comes cooler temperatures and more excuses to bake! This apple cider cake is so delicious and easy to make. It's great for dessert or breakfast. Spread a little nut butter on a slice if you're looking for something extra indulgent. Yum!

Cake Ingredients:
2 cups of oat flour
1/2 cup unsweetened apple sauce
1/2 cup apple cider
1/2 cup maple syrup
2 tsp vanilla extract
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
Cinnamon Sugar Topping:
2 tbsp coconut sugar
1/2 tsp cinnamon
Directions:
Preheat the oven to 350°F and grease or line your loaf pan. I used a 8 x 4.5 inch loaf pan.
Mix together the wet ingredients and in a separate bowl mix together the dry.
Add half the dry mixture to the wet at a time and mix well. Once the mixture is well combined, add the mix to your loaf pan.
Mix together the coconut sugar and 1/2 tsp of cinnamon. Sprinkle it evenly over the top of the cake.
Bake for 40-50 minutes or until a toothpick comes out clean.
Allow the cake to cool at room temperature before slicing. Store leftovers in an airtight container.
Could I use GF AP flour instead of oat flour?

We love the Apple Cider Cake! The depth of flavor is outstanding. Thanks for such a simple Fall recipe; I needed something other than pumpkin bread. My only substitute was using coconut palm crystals in the topping.
