Banana Bread (Vegan, Oil-free, Gluten free, & Refined sugar free)

I'm sure most people have thrown out an over ripe banana or two, but this easy and delicious banana bread is the answer! I'm definitely not a professional when it comes to baking, but this recipe is simple and delicious.


Ingredients:

  • 3 medium very ripe bananas

  • 3 cups oat flour (Use certified gluten free if desired)

  • 1/2 cup chopped walnuts (Optional)

  • 1/4 cup plain unsweetened non-dairy milk

  • 1/2 cup pure maple syrup

  • 1 tsp vanilla extract

  • 2 tsp baking powder

  • 1 tsp baking soda

  • 1/4 tsp salt









Directions:

  1. Preheat your oven to 350°F and lightly grease a loaf pan, or line it with parchment paper. (I used a 8 x 4.5 inch loaf pan)

  2. Peel your bananas and add to a large mixing bowl. Use a fork to mash your bananas then add the rest of your wet ingredients and mix well.

  3. In a separate bowl combine your dry ingredients, except for the walnuts, and mix well.

  4. Add half of your dry mix to the wet and mix well. Add the remaining dry mix and mix until everything is combined. Mix in your chopped walnuts and then transfer the mix to your loaf pan.

  5. Bake at 350°F for 30-35 minutes. Insert a toothpick into the center of your banana bread to check if it is done. If the toothpick comes out clean, it is finished baking. If not, continue baking in 5 minutes increments until the toothpick comes out clean.

  6. Allow the banana bread to cool at room temperature before slicing. Store leftovers in an airtight container in the refrigerator.

Notes: For banana bread that isn't as sweet, use 1/4 cup maple syrup and 1/2 cup non-dairy milk.
