"Chicken" and Broccoli (Vegan)

This meal is ready in 30 minutes or less and is so delicious. You will definitely not be missing carryout with this dish. Enjoy with your choice of rice.


Ingredients:

  • 4 cups of soy curls

  • 4 cups of steamed broccoli

  • 4 cups of warm water

  • 1/4 cup cold water

  • 1/4 cup tamari or soy sauce

  • 1/4 cup maple syrup

  • 4 gloves of garlic, minced

  • 1 tsp minced ginger

  • 1/4 tsp red pepper flakes

  • 1 tbsp rice vinegar

  • 1 tbsp vegan "chicken" bouillon

  • 2 tbsp corn starch

  • Cooked rice for serving

  • Toasted sesame seeds (optional)






Directions:

  1. Add the "chicken" bouillon to the warm water and stir until it dissolves. Set 1/4 cup of the broth aside for the sauce. Then pour the remaining broth over the soy curls and allow to soak for 10 minutes.

  2. Combine the 1/4 cup of broth with the tamari, maple syrup, cold water, vinegar, garlic, ginger, red pepper flakes, and corn starch.

  3. Heat a large skillet to a medium heat and drain the soaking soy curls. Add the soy curls to the skillet and cook until the soy curls are light brown. (The soy curls are wet when added to the pan, so I didn't need to add any water If yours begin to stick just add a little water as you saute.)

  4. Add the steamed broccoli and sauce in with the soy curls. Mix well. Continue cooking until the sauce has thickened, stirring often. Serve with your choice of rice and optional toasted sesame seeds.


Note: You can use vegan "beef" bouillon for a delicious "beef" and broccoli.
