Cilantro Garlic Potatoes (Vegan, Oil-free, & Gluten free)

Who doesn't love potatoes? These potatoes make an easy and tasty side dish or you can add them to tacos or a burrito.

Ingredients:

  • 5-6 medium potatoes, cut into bite size pieces

  • 6 cloves of garlic, minced

  • 1/4 cup finely chopped cilantro

  • 2 tbsp aquafaba (The liquid from a can of chickpeas)

  • 1 tbsp nutritional yeast

  • 1/2 tsp salt

  • Additional salt and pepper to taste

Directions:

  1. Preheat your oven to 450°F and line a baking sheet with parchment paper or a oven safe silicone baking mat.

  2. Add your diced potatoes to your lined baking sheet and bake for 20 minutes. Flip your potatoes and bake for an additional 20 minutes.

  3. Mix together your aquafaba, garlic, nutritional yeast, salt, and cilantro. Add your potatoes to a large bowl and toss with your aquafaba mixture until your potatoes are evenly coated.

  4. Transfer your potatoes back to your baking sheet and bake for 10-15 minutes or until they're crispy. Season with salt and pepper to taste and serve.

Notes: Cooking times may vary depending on your oven, so you will want to keep an eye on them.
