Easy Creamy Lemon Pasta (Vegan, Oil-free, & Gluten free)

This lemon pasta is one of the easiest meals to throw together and is incredibly delicious. It only takes 15-20 minutes to make and uses mostly pantry ingredients.

Ingredients:

  • 12 oz pasta (Use gluten free if desired)

  • 2 cups frozen peas

  • 1 & 1/2 tbsp raw cashew butter

  • Juice and zest from one lemon (About 2 tbsp of juice)

  • 2 tbsp nutritional yeast

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1/4-1/2 tsp pepper

  • Salt to taste

Directions:

  1. Cook your pasta according to package instructions, adding your frozen peas in the last 3-5 minutes of cooking. Reserve 1 cup of the cooking water before straining the pasta.

  2. In a bowl combine all other ingredients and 1/2 cup of the pasta water. Once well combined, add to your pasta and mix. Add the remaining pasta water as needed to create your sauce and mix again.

  3. Season with salt and additional pepper before serving.
