Mashed Potatoes with "Poultry" Gravy (Vegan, Oil-free, & Gluten free)

Caramelized onion and garlic mashed potatoes with "poultry" gravy. The perfect side dish for any family meal, delicious and super easy to make.

Mashed Potatoes Ingredients:

  • 5 lbs of golden potatoes, cleaned and roughly chopped (Peel if desired)

  • 2 medium yellow onions, diced

  • 1 head of garlic (10-12 cloves), minced

  • 1/2-1 cup plain unsweetened nondairy milk

  • 2 tbsp dry parsley (Optional)

  • Salt and pepper to taste

Gravy Ingredients:

  • 4 cups vegan "chicken" stock

  • 5 tbsp whole wheat flour or all purpose gluten free flour

  • 1-2 tbsp low sodium tamari

  • 2 tbsp nutritional yeast

  • 2 tsp garlic powder

  • 2 tsp onion powder

  • 1 tsp poultry seasoning

  • Pepper to taste

Mashed Potatoes Directions:

  1. Add your potatoes to a large stock pot and cover with water. Cover the pot and bring to a boil.

  2. Reduce the heat to medium and cook until the potatoes are fork tender. Stirring as needed.

  3. In a nonstick pan over medium heat, add your onions. Stirring occasionally. If your onions start to stick you can add a splash of water. Once your onions are starting to turn from translucent to light brown, add your garlic. Continue cooking your onions until they are a caramel color and the garlic is very fragrant.

  4. Add the onion, garlic, parsley, and 1/2 cup nondairy milk to your potatoes. Mash your potatoes to the smoothness you desire and mix well so everything is incorporated. Add additional nondairy milk if needed then season with salt and pepper.

"Poultry" Gravy Directions:

  1. Mix together your flour, nutritional yeast, garlic powder, onion powder, and poultry seasoning.

  2. Heat a pot over medium heat then add your vegan "chicken" stock and 1 tbsp tamari. Then add half of your flour mixture and mix well. Add the other half of the flour mixture and mix well again. You do not want any lumps.

  3. Stirring occasionally, cook your gravy until it has thickened to the desired consistency. At this point, taste it and add additional tamari if desired. Then season with pepper.

  4. Serve with mashed potatoes as desired.

I feel like I am missing something - how do you make vegan "chicken" stock? Or what do you use - just veggie stock??

I used a store bought vegan "chicken" stock for this recipe. You could use regular vegetable broth, but the flavor will be very different. I hope that cleared up the confusion.
