Need something new to make with your leftover rice? This delicious and easy "unfried" rice is the perfect way to bring life back to your leftover rice. Serve it as a side dish or a main dish.
Ingredients:
3 cups of cold cooked rice
3 cups frozen mixed vegetables (I used corn, carrots, peas, and green beans)
3 green onions, thinly sliced (Keep the white and green parts separate)
6 cloves of garlic, minced
1 tbsp minced ginger
3-4 tbsp low sodium tamari
1 & 1/2 tbsp gochujang (Use gluten free is desired)
Sesame seeds for garnish (Optional)
Directions:
Heat a large nonstick skillet over medium heat then add the white parts of your green onions, garlic, and ginger and cook for 2-3 minutes.
Increase the heat to medium high then add your frozen vegetables, gochujang, and 1 tbsp of tamari. Stir occasionally, cooking for 3-5 minutes.
Add your rice and stir well, make sure there are no clumps of rice. Add 2-3 tbsp of tamari and cook for 5-7 minutes, stirring often. Mix in the green part of your green onions in the last 30-60 seconds of cooking. Top with sesame seeds if desired.
