Teriyaki Pineapple Bowl (Vegan)

Teriyaki sauce, soy curls, pineapple and rice. Yum! This recipe is super simple, but if you want to impress your dinner guests then look no further. Delicious and just in time for summer. Serve this meal with your choice of rice.


Ingredients:

  • 4 cups of soy curls

  • 1 medium yellow onion, diced

  • 1 medium red bell pepper, diced

  • 1 medium ripe pineapple

  • 4-6 cloves of garlic, minced

  • 2 tsp minced ginger

  • 4 cups warm water

  • 1 tbsp vegan chicken bouillon

  • 2 tbsp tamari or soy sauce

  • 2 tbsp maple syrup

  • 1/2 cup vegan teriyaki sauce*

  • Juice from half of a lime

  • 1/4 teaspoon of red pepper flakes

  • 1 tbsp corn starch

  • Rice for serving




Directions:

  1. Add the bouillon to the warm water, stirring until it dissolves. Transfer your soy curls to a large bowl then pour 3 & 3/4 cups of the warm water over the soy curls. Set the soaking soy curls aside for 10 minutes.

  2. To prepare your pineapple bowls you will need to slice the pineapple vertically down the middle. Make some horizontal and vertical slices into the fleshy part of the pineapple, making a checkered pattern. Be careful not to cut all the way through the skin of the pineapple. Then using a spoon, scoop out the fruit. If the center of the pineapple is tough, you will want to discard it.

  3. Bring a large skillet to medium heat then add your onion, bell pepper and tamari/soy sauce. Stirring occasionally so nothing sticks. Add a small amount of water as needed if anything sticks. Continue cooking until your onions are translucent.

  4. Add your garlic, ginger and red pepper flakes to the skillet, stirring occasionally. Drain your soy curls, then once your garlic is fragrant add your diced pineapple and drained soy curls to the skillet. Increase the heat to medium high, continue cooking and stirring occasionally.

  5. When you begin to see some browning on your soy curls, add your maple syrup, lime juice and mix well. In a bowl, mix together your teriyaki sauce, reserved "chicken" stock and corn starch. Slowly pour the teriyaki mixture into the skillet 1/3 of the sauce at a time. Stirring as needed to mix everything together. Once the sauce has thicken you're ready to serve.

  6. Add rice and teriyaki soy curls to your pineapple bowl. Garnish as desired with sesame seeds, green onion and/or a wedge of lime.


*You can use store bought or homemade teriyaki sauce.
