Ingredients:
Sauce:
1 large yellow onion, diced
4 cloves of garlic, minced
24 oz plain tomato sauce
2 tbsp tomato paste
16 oz cooked pasta (Use gluten free if desired)
1/4 cup vodka
1/2 cup pasta cooking water
1 tsp garlic powder
1 tsp onion powder
2 tsp Italian seasoning
1/2 tsp red pepper flakes
Salt and pepper to taste
Parsley for garnishing (Optional)
Cashew Cream Sauce:
1/2 cup soaked raw cashews (Soak for 4+ hours or boil for 5-10 minutes)
1/2 cup plain unsweetened non-dairy milk
Juice from 1/2 a lemon
2 tbsp nutritional yeast
Directions:
Heat a pan to medium heat and add your diced onion. Saute until translucent, adding a splash of water as needed so nothing sticks. Add your minced garlic and saute until fragrant.
Add tomato paste and continue cooking for 2-3 minutes. Then add your tomato sauce, spices and vodka. Mix well and allow your sauce to simmer for 10 minutes, stirring occasionally.
To a blender or food processor add your soaked cashews, non-dairy milk, lemon juice and nutritional yeast. Blend until smooth.
Add the cashew cream to the sauce and mix well. Allow to simmer for another 5-10 minutes, stirring occasionally before adding your cooked pasta and pasta water. Mix well and serve. Garnish with optional fresh or dried parsley.
