This baked oatmeal can be mixed and baked in one pan, making it perfect for an easy breakfast with little clean up. Baked oatmeal is a great meal prep breakfast option and so delicious.

Ingredients:
3 cups quick oats (Use gluten free if desired)
2 cups plain unsweetened non-dairy milk
1/4 cup maple syrup
1/4 cup non-dairy chocolate chips/chunks
1/4 cup chopped walnuts or nut/seed of your choice
1 cup pumpkin puree (Not pumpkin pie filling)
1 tsp baking powder
2 tsp pumpkin spice/pie seasoning
2 tsp vanilla extract
Pinch of salt
Directions:
Preheat your oven to 350°F.
In an oven safe dish add the pumpkin puree, pumpkin spice, vanilla extract, baking powder, and salt (I used a 9x13 pan). Mix well to combine.
Add your oats, maple syrup, and non-dairy milk to the pan and mix everything to combine. Then mix in the chocolate chips and chopped walnuts.
Bake for 30 minutes then allow to cool for 5-10 minutes before slicing. Serve as desired and store leftovers in the fridge.
