This baked oatmeal can be mixed and baked in one pan, making it perfect for an easy breakfast with little clean up. It's great for meal prep, and as a bonus your kitchen will smell like banana bread!

Ingredients:
- 3 cups quick oats (Use gluten free if desired)
- 2 cups plain unsweetened non-dairy milk
- 1/4 cup maple syrup
- 4 very ripe bananas
- 1 tsp baking powder
- 2 tsp cinnamon
- 2 tsp vanilla extract
- Pinch of salt
Directions:
Preheat your oven to 350°F.
In an oven safe dish add three peeled bananas, using the back of a fork mash them very well (I used a 9x13 pan). Add the cinnamon, vanilla extract, baking powder, and salt. Mix well to combine.
Add your oats, maple syrup, and non-dairy milk to the pan and mix everything to combine. Slice your remaining banana and place the slices directly on top of the oatmeal.
Bake for 30 minutes then allow to cool for 5-10 minutes before slicing. Serve as desired with nuts/seeds, nut/seed butter, fresh fruit or a drizzle of maple syrup.
