It's so easy to make your own salad dressing and it allows you to control everything that goes in it. Caesar has always been one of my favorites and I'm really happy with how this turned out. I like to toss my greens of choice with some dressing, nutritional yeast, and lots of fresh cracked pepper when serving.

Ingredients:
1 cup raw cashews
2 cloves of garlic
3 tbsp capers
Juice from 1 lemon (About 3-4 tbsp)
1 tbsp dijon mustard
1 tsp apple cider vinegar
1 tsp onion powder
3/4 cup water
Salt and pepper to taste
Directions:
Soak your cashews in water for 4+ hours or boil for 5-10 minutes. If you choose to boil them, rinse them with cold water to cool them before blending.
Add all your ingredients to a blender, blend on high until smooth and scrape down the sides as needed. Season with salt and pepper then store in an air tight container in the fridge for up to a week.
