Tofu scramble makes a delicious and easy breakfast. I like to serve it with toast, potatoes, fresh tomatoes or fruit. You can add additional vegetables like mushrooms, and spinach. This recipe is great for meal prepping, so I often make a double batch. You can also add it to breakfast tacos or burritos. Breakfast burritos can be frozen and reheated later.

Tofu Scramble Spice Mix:
(This mix makes enough for four batches of tofu scramble)
1/2 cup nutritional yeast
4 tsp Kala namak/Indian black salt
1 tbsp garlic powder
1 tbsp onion powder
1 tsp paprika
1/2-1 tsp ground turmeric
Tofu Scramble Ingredients:
12-14 oz block of firm or extra firm tofu, drained
1 small yellow onion, diced
1 medium red, yellow or orange bell pepper, diced (I used half orange and half red bell pepper)
2-3 cloves of garlic, minced
1 jalapeno, finely diced and deseeded as desired (optional)
3 tbsp tofu scramble spice mix
Pepper to taste
Directions:
Mix all the tofu scramble spice ingredients together and store in an air tight container.
In a skillet over medium heat add the diced onion, bell pepper, garlic, and jalapeno. Stir occasionally and cook until the onions are translucent.
Crumble in the block of tofu. You can use a fork or your fingers. Mix everything together then add the 3 tbsp of the spice mix.
Stir occasionally until everything is hot. Season with black pepper and serve.
